Bob's Corn Chowder

Ingredients:

1 TB butter
1 TB vegetable oil
1 medium onion, chopped
2-3 cloves garlic, minced
1/2 jalapeno (or other hot pepper) seeded and chopped
3 cups milk
2 cups fresh corn kernels (2-3 ears, stripped from cob)
1 tsp salt
1 large ripe tomato, chopped
1 TB cilantro
lime wedges

Directions:

Heat butter and oil in a large pot until melted. add onion, garlic and hot pepper. Cook until tender, 5-10 minutes.

Stir in milk, corn and salt. Bring to boil, reduce heat and simmer gently for 3 minutes. Add tomato. Simmer another 2-3 minutes. With a slotted spoon, remove 1 1/2 cups of the solids from the soup and puree in a blender until smooth. Return puree to soup. heat gently to warm through, stir in cilantro. Serve with a lime wedge
