Collards with Sun Dried Tomatoes

Ingredients:

1 bu collard greens
2 cups vegetable or chicken broth
1 onion, chopped
3 cloves garlic minced
1 hot pepper, seeded and chopped (optional)
1/2 cup sun dried tomatoes, coarsely chopped

Directions:

Wash and devein collards. Chop into 1/2” strips. bring broth to a boil. add onion, garlic, hot pepper and collards. reduce heat and simmer for 20 minutes or more until greens are tender. Toss with sun dried tomatoes and serve.
