Garlicky Mustard Greens

Ingredients:

1 bunch mustard greens
1 TB olive oil
1 cup chopped onion
3 cloves garlic, minced
1 bell pepper, chopped
3/4 cup vegetable broth
1 TB cider vinegar
2 tsp sugar

Directions:

Wash greens thoroughly. Cut into 1/2” strips. Saute onion and garlic in oil for 3 minutes. Stir in greens, pepper and broth. Bring to a boil, then reduce heat to low. Cook covered until tender 20-25minutes. In a small bowl, combine vinegar and sugar, stir until dissolved.pour over greens and serve immediately.
