Hunan Eggplant
Ingredients:
1 eggplant, peeled and cut into 1” slices
2 TB broth or water
1 TB fresh lemon juice
1 tsp dark sesame oil
1/2 tsp sugar
dash of salt
1 TB onion, finely chopped
1/2 a hot pepper, seeded and finely chopped
2 garlic cloves, minced
Directions:
Cut eggplant slices in half. Steam eggplant covered, 5 minutes or until tender. Combine broth, juice, oil, sugar and salt in a small sauce pan; bring to a boil. Saute garlic, onion, and hot pepper in oil until just starting to soften. drizzle sauce over eggplant and sprinkle onion and garlic mixture on top. Serve immediately.
