Tomatillo Taco Casserole

Ingredients:

1 1/2 cups tomatillos, halved
1 lb ground turkey, beef or Gimme lean
1 small onion, chopped
1 clove garlic, minced
1 can refried or black beans
1 cup grated cheese (cheddar or Monterey Jack)
tortilla chips
sour cream salsa
hot peppers (optional)

Directions:

Brown meat, add onion and garlic and cook until tender. (add the finely chopped hot pepper if desired). Line bottom of a 9 x 13 baking pan with tortilla chips. Spread mixture over chips. heat beans with 1/2 cup water and tomatillos in the same pan used for the meat. Simmer gently until thoroughly mixed and heated (about 10 min). Pour over meat layer. Cover with foil and bake at 350° for 20 minutes.

Uncover and sprinkle with grated cheese. return to oven until cheese is melted. Serve with sour cream and salsa as toppings.
